Ingredients

The flours, cocoas, sugars, leaveners, and binders the recipes call for. Where it matters, the brand recommendations and what makes one type different from another.
black cocoa
The most heavily Dutched cocoa available — near-complete alkalization producing a powder that's nearly jet black with a pH of 8.0-8.5. Most famous for being the cocoa in Oreo cookies; the distinctive cookie-cutter dark color and slightly dry, faintly bitter flavor are the black cocoa signature. Usually blended 25-50% with standard Dutch in baking — straight black cocoa is visually dramatic but flavor-flat. King Arthur Double Dark Cocoa Blend is a pre-mixed Dutch + black combo that delivers the dark color without the flavor loss.
Dutch-process cocoa
Cocoa powder treated with potassium carbonate (a mild alkali) after pressing, neutralizing its natural acidity (pH 7.0-8.5 vs natural cocoa's 5.0-6.0), deepening the color, and smoothing the flavor. Named after Coenraad van Houten, the Dutch chemist who patented the process in 1828. Produces a darker, mellower, less acidic chocolate flavor than natural cocoa. Brands: Droste, Valrhona, Cacao Barry, King Arthur Double Dark. Pairs with baking powder (which has its own acid). The default for fudge brownies in this library because the smoother flavor doesn't compete with brown sugar and chopped dark chocolate.
espresso powder
Dehydrated, finely ground instant espresso — concentrated coffee in dry-spice form. Used in tiny percentages (0.5-2% of flour weight) in chocolate bakes to amplify chocolate flavor without making the bake taste like coffee. The effect is subtle but noticeable side-by-side. Not the same as instant coffee crystals (weaker, with a different roast profile) — use Medaglia D'Oro Instant Espresso, King Arthur Espresso Powder, or any brand labeled "instant espresso." Whisk into the dry ingredients, not the wet — it disperses evenly that way and doesn't form lumps. Stays usable for years sealed; loses aroma when opened. Optional in most chocolate recipes but a low-cost flavor upgrade.
GF 00-style flour
A finely milled gluten-free flour formulated specifically to mimic wheat 00 flour for pizza and bread. The leading brands are Caputo Fioreglut (Italian, sold in red bags, widely considered the gold standard) and King Arthur Gluten-Free Bread Flour (US alternative). Both contain higher concentrations of protein-mimicking binders than a 1-to-1 baking blend, so the dough handles much closer to wheat — stretchable, foldable, and capable of holding shape during a stretch or shape. GF 00 is meaningfully more expensive than a standard 1-to-1 blend and isn't necessary for most home GF baking — reserve it for pizza doughs and rustic loaves where the structural difference matters. For sandwich bread, focaccia, and flatbreads, a standard GF blend plus psyllium husk gives nearly identical results.
GF flour blend
A pre-mixed gluten-free flour combining 3-5 different flours and starches to approximate the behavior of wheat. Most quality blends follow a similar pattern: rice flour (structural backbone), tapioca or potato starch (binding, lightness), a whole-grain flour like sorghum or millet (flavor depth), and sometimes xanthan gum already mixed in. The leading commercial blends — Bob's Red Mill 1-to-1, King Arthur Measure-for-Measure, and Cup4Cup — all work in our recipes. Two practical notes. First: if the blend already contains xanthan, skip any added xanthan in the recipe; doubling up makes the dough gummy. Second: for extra chew in pizza or flatbreads, swap 10-20% of the blend for glutinous rice flour (mochiko) — despite the name it contains no gluten, just creates a stretchier, slightly sticky crumb. Brand performance varies; if you're new to GF baking, start with the Bob's 1-to-1 blend.
levain
A natural-leaven pre-ferment built from your sourdough starter, used as the leavening agent in a sourdough recipe. Refreshed 8-12 hours before mix day so it peaks right when you need it. Typically built at a 1:5:5 ratio — one part starter, five parts flour, five parts water — in an amount sized to the recipe (often 100-200g total). The levain is the bread's yeast and bacterial culture multiplied to recipe-strength: starter provides the seed; the long refresh gives the wild yeast time to multiply and the bacteria time to produce the flavor acids that define sourdough. Use the levain when it's domed, bubbly, and either floats in water or has clearly more than doubled. Skipping the levain build (using cold starter straight from the fridge) is the most common reason home sourdough doesn't rise.
malt syrup
A thick, dark, sweet syrup made by sprouting barley grains, then mashing, cooking, and concentrating the resulting sugary liquid. Two forms: diastatic (still contains active enzymes that break down starches, used to boost yeast activity in long-fermented doughs) and non-diastatic (cooked higher to deactivate enzymes — used purely for sweetness and color). In bread baking, malt syrup is mostly associated with NY-style bagels: it's added to both the dough (sweetness, deeper crust color) and the boiling water (gloss, signature flavor). King Arthur and Hodgson Mill are the most common US brands. Honey works as a flavor substitute in a pinch but loses the malty depth; brown sugar gives sweetness without the characteristic flavor.
natural cocoa
Unprocessed cocoa powder with its natural acidity intact — pH 5.0-6.0, reddish-brown color, sharper and more fruity-acidic flavor than Dutch-process cocoa. Brands: Hershey unsweetened, Ghirardelli unsweetened. Reacts with baking SODA (a base) to provide leavening in recipes that depend on this pairing; swapping natural for Dutch in a soda-leavened recipe leaves the soda nothing to react with and the bake fails. Works fine in baking-powder recipes (which have their own acid built in) — just expect a brighter, slightly more astringent chocolate flavor.
psyllium husk
The outer coating of the psyllium plant seed (Plantago ovata), sold as whole-flake husks or fine ground powder. Mostly soluble fiber. In gluten-free baking, psyllium hydrates into a gel that mimics gluten's elasticity — without it, GF doughs are essentially batters with no way to trap fermentation gas. Typical usage: 4-8% by flour weight in GF breads. The powder form hydrates fast and disperses evenly; the whole flakes are more visible in the crumb and don't fully dissolve. For breads, always use powder. Common brands: NOW Foods (psyllium husk powder), Yerba Prima, Anthony's. Whole husks can be ground in a spice grinder if that's all you can find.
SAF Gold (osmotolerant yeast)
A red-label instant yeast bred to ferment reliably in high-sugar doughs (>10% baker's percentage sugar) like brioche, challah, panettone, and sweet rolls. Regular instant yeast slows down in sugary doughs; SAF Gold doesn't. Substitutes 1:1 for regular instant. Not required — regular yeast still works, just slower.

baking soda bath
A boiling water bath with baking soda dissolved in it, used to give pretzels their signature dark mahogany crust and chewy bite. Standard ratio is ½ cup baking soda per 8 cups water. Briefly simmering shaped pretzels in the alkaline bath (30 seconds per side) gelatinizes the surface starches, which produces the distinctive sheen and chew. The bath's alkalinity is the key — boiling water alone won't give pretzels their character. Boiling the baking soda for a few minutes before adding the pretzels increases the alkalinity (~10× more, as bicarbonate partially converts to sodium carbonate), producing even darker, more flavorful crusts. Commercial pretzel makers use food-grade lye (1-4%), which is much more alkaline still — baking soda is the safe home equivalent.
brown butter
Butter cooked past the melting point until the water content evaporates and the milk solids toast on the bottom of the pan, turning golden brown and developing nutty, caramel-edged flavors. Called beurre noisette (hazelnut butter) in French. Cooked at medium heat with frequent swirling, usually 8-12 minutes total: the butter melts, foams, quiets, then the milk solids hit the bottom and start browning — pull from heat the moment you smell nuttiness. Browning evaporates ~15-20% of the butter weight as water, so browned butter weighs less than the raw amount you started with. Used in brownies, financiers, and chewy chocolate-chip cookies for depth that plain melted butter cannot produce. ⚠️ Pour hot brown butter into metal or ceramic — glass containers can shatter, especially in an ice bath cool-down.
cold retard
A long, slow rise in the refrigerator (usually 12-72 hours). Slows fermentation dramatically — yeast activity drops by half for every ~18°F / 10°C cooler — while the bacterial side of a sourdough or pre-ferment continues to develop flavor at its own slower pace. The net effect: deeper sourness, more complex aromatics, and a more open crumb structure than the same dough fermented in one warm stretch. Cold retarding also has practical benefits beyond flavor. It splits a long bread project across two days, firms the dough enough to score cleanly, and lets cold-start oven techniques work without overproofing in the warm-up window. Cold-retarded doughs go into the oven straight from the fridge — no warming required.
creaming method
A mixing technique where solid fat (butter, usually softened or in the brownie case re-solidified brown butter) is beaten with granulated sugar until the mixture lightens in color and grows in volume — typically 3-5 minutes in a stand mixer with the paddle attachment, or 5-7 minutes by hand. The mechanical action forces air pockets into the fat-sugar mass; those pockets are the foundation of leavening in many cake and cookie recipes. Brown sugar is added AFTER the creaming step (rather than with the granulated sugar) because the molasses content interferes with the air-incorporation process. The creaming step is what separates the brown-butter brownie method from the simpler melt-and-whisk approach — you trade time for a deeper crackle on top and a slightly lighter crumb.
dimpling
Pressing your fingertips deep into proofed focaccia dough just before baking — all the way down to the bottom of the pan, leaving deep pockmarks across the surface. Does three things simultaneously: it breaks up the largest fermentation bubbles (which would otherwise turn into a single oversized hole during baking), creates dimples that hold olive oil and flaky salt so the toppings don't all slide off the top, and produces the signature pocked, golden-brown surface that defines focaccia visually. Dimple aggressively — focaccia rebounds during the final oven spring, and shallow dimples disappear entirely.
dough chilling
Resting shaped or mixed dough in the refrigerator before it bakes. Chilling firms the fat so cookies spread less and hold their shape and edges in the oven; it also hydrates the flour and gives enzymes time to break down starches, which deepens flavor — the toffee notes you taste in overnight-rested cookie dough. For cut-out cookies the cold is what makes a soft dough rollable and keeps the cut shapes crisp instead of slumping. Common range runs from 30 minutes (just to firm the butter) up to 48 hours (for full flavor development), depending on the goal.
fraisage
A French kneading technique: use the heel of your hand to smear just-mixed dough across the counter in short, firm strokes — typically about ten passes for a single batch. Originally a pastry technique for pâte brisée, where the goal is to coat the flour with butter without overworking it. In bread, fraisage finishes incorporation and develops gluten without the slap-and-fold of a French knead. Most useful for enriched doughs (brioche, challah) where you want gluten development without warming the dough up too much, and for stiff doughs where stand-mixer kneading risks tearing the gluten network. Skip it for high-hydration doughs — they're too wet to smear cleanly and respond better to stretch-and-fold instead.
peanut butter swirl
A technique for adding a contrasting ingredient (peanut butter, Nutella, dulce de leche, jam, even brownie batter of a different color) on top of a base batter and dragging a knife or skewer through to create marbled patterns visible in the finished bake. Unlike folding in, which distributes the ingredient evenly, swirling creates discrete pockets and visual contrast. For brownies, the standard technique: spread the brownie batter in the pan, dollop 6-8 spots of room-temperature peanut butter on top, then drag the tip of a butter knife through the dollops in a figure-8 pattern. Bake normally — the peanut butter stays distinct from the brownie crumb because the two have different set temperatures.
pre-shape
A loose, gentle first shaping done after dividing dough but before the final shape — usually a rough round or loose log. Followed by a 15-30 minute bench rest, then the final shape. The point: build just enough surface tension to give the dough structure and let the gluten relax before the final tighter shape, without overworking it. Skipping the pre-shape (going directly to final shape after dividing) produces flatter loaves with weaker structure because the gluten hasn't had a chance to organize. The bench rest between pre-shape and final shape is sometimes called the bench proof — it's where the dough builds final extensibility for clean shaping.
scoring
Slashing the top of a shaped loaf just before baking with a sharp blade or razor. Controls where the loaf splits open during oven spring — without scoring, the trapped fermentation gas finds the weakest seam on its own and bursts there, often with an ugly tear or a flat split instead of a designed opening. Depth is the variable that matters most: about ¼ inch / 6mm at a 30-45° blade angle gives the dramatic raised “ear” that defines well-baked sourdough. Too shallow and the cut doesn't weaken the crust enough; too deep and the dough above the cut is too heavy to lift cleanly. Cold dough is dramatically easier to score than warm dough — one of the reasons the overnight cold retard exists. Patterns range from a single functional slash (most controlled rise) to decorative geometry (mostly visual). Boil-then-bake breads (bagels, pretzels) are not scored.
stretch and fold
Grab one side of the dough in the bowl, stretch it up gently, fold it over the middle. Rotate the bowl a quarter turn and repeat — four passes around the bowl equals one set. Typically performed 3-4 times at 30-minute intervals during bulk fermentation. Stretch-and-fold replaces kneading for wet doughs (anything above ~70% hydration) where conventional kneading is impractical because the dough is too sticky to handle on a counter. The technique builds gluten in pulses rather than all at once: each fold realigns and tightens the gluten network without the surface tension getting in the way. The rests between sets let fermentation gas build up too, so the dough gets stronger AND lighter with each round. Standard for ciabatta, focaccia, country sourdough, and any high-hydration recipe.
windowpane test
Pinch off a small piece of dough and stretch it gently between your fingers. If it stretches thin enough to see light through without tearing — a translucent “windowpane” — the gluten is fully developed and the dough is ready to bulk-ferment. The test works because well-developed gluten is elastic enough to stretch into a near-transparent sheet without breaking; under-developed gluten tears immediately. Most common in enriched-bread recipes (brioche, challah, sandwich loaves) where the gluten network has to support a lot of fat and sugar without collapsing. Not applicable to gluten-free doughs — there's no gluten to test — and unnecessary for high-hydration sourdoughs where the dough's slack texture makes the pull-and-stretch test meaningless.

autolyse
A rest after mixing just flour and water, before salt and yeast go in. Usually 20-60 minutes, sometimes longer for whole-grain doughs. During the rest, the flour fully hydrates and enzymes in the flour start breaking down starches and proteins. Gluten begins to form on its own without kneading. The dough comes out smoother, more extensible, and easier to shape than the same dough mixed in one go. The technique was formalized by French baker Raymond Calvel in the 1970s as a response to industrial bread's declining flavor. Often confused with the fermentolyse (everything mixed, then rest), which is a related but distinct technique — the autolyse specifically defers salt and yeast so the dough can hydrate before fermentation starts. For most home recipes either works; the autolyse advantage is most visible in whole-grain or high-hydration doughs.
biga
An Italian-style stiff pre-ferment, roughly 50-60% hydration (not equal parts flour and water — that would be a poolish). Mixed with a small amount of yeast (~0.1-0.3% of the biga's flour) and rested 12-16 hours at room temperature until tripled in volume and webbed with bubbles. The next day, the biga goes into the final dough as a pre-fermented chunk of flour. The stiff hydration is the defining difference: where poolish develops sharp, slightly tangy flavors, biga develops gentler nutty and yeasty notes. The slower fermentation also produces stronger gluten, which is why ciabatta and many Italian artisan breads use a biga rather than a poolish — the strong gluten network supports the recipe's characteristic high hydration without collapsing.
brownie brittle edges
The crispy, almost-cookie-like crust that forms on the outer edges and corners of a baked brownie — caramelized sugar plus butter on the pan-facing surfaces produces a chewy-crisp texture that's distinct from the fudgy middle. Some bakers (and brownie lovers) actively prefer the corner pieces for exactly this. To maximize the brittle, bake 3-5 minutes past the normal done point — you'll get drier middles in exchange. Some commercial products (notably the Sheila G brand) sell brownie batter baked thin specifically to be all-brittle. At home, choosing an 11x15 pan instead of a 9x13 thins the bake enough to push the entire sheet toward brittle territory.
egg yolk
The yolk is fat plus an emulsifier (lecithin) with very little water, so it behaves nothing like the white. Adding an extra yolk instead of a whole egg enriches the dough and increases chew without adding the water and protein that egg whites contribute for structure and lift. Whites push a bake toward cakier and drier; yolks push it toward richer and chewier. That trade-off is why some cookie recipes call for "1 egg plus 1 yolk" — you get the binding of a whole egg plus the extra fat of a yolk for a softer, chewier crumb.
egg-as-hydration
A large egg is about 75% water by weight, so eggs in a dough contribute meaningfully to total hydration. A bread that lists 20% eggs and 50% water is actually closer to 65% total water (50 + 20×0.75 = 65). The calculator tracks ingredients separately, but understanding the math matters when comparing enriched recipes to lean ones, or when substituting eggs for milk.
fermentolyse
A rest after mixing all ingredients including salt and yeast, before kneading. Less hydration time than a pure autolyse (because the salt tightens the dough and the yeast starts working immediately), but simpler — no two-stage mix. Pizza recipes, poolish-based loaves, and most home bakers use this in place of a true autolyse without noticeable difference in result.
fudgy vs cakey brownies
The two ends of the brownie texture spectrum. Fudge brownies have a dense, glossy, barely-set interior — high fat, low flour, minimal leavening. Cakey brownies have an open, springy, crumbly interior — more flour, more eggs, more baking powder. Which one you get is mostly controlled by three knobs: butter ratio (higher = fudgier), egg ratio (more = cakier), and baking powder amount (less = fudgier). The library default is firmly fudge-brownie territory; dial baking powder up to 3-4% of flour and eggs up to 130-150% of flour for a cakier result without changing the rest of the recipe.
high-altitude adjustments
Above ~3,000 ft / 900 m, atmospheric pressure drops and dough rises faster (gas expands more) and dries out quicker. Typical adjustments: reduce yeast 15-25% (less is more — watch the dough, not the clock), increase liquid 1-2 tbsp per cup of flour, and shorten fermentation times. Above ~5,000 ft / 1,500 m these effects compound — King Arthur publishes a dedicated altitude baking guide worth consulting. The library defaults assume sea-level conditions.
Maillard browning
The chemistry behind why baked surfaces turn brown and develop roasted, savory flavors. Named after French chemist Louis Camille Maillard, who described the reaction in 1912. Amino acids (protein) react with reducing sugars (glucose, fructose, but NOT sucrose directly) at temperatures starting around 280°F / 140°C, kicking into high gear at 310°F / 155°C and above. The reaction produces hundreds of flavor compounds — roasted notes, browning pigments, toasted aromas — that are responsible for the flavor of bread crust, brownie tops, seared meat, and roasted coffee. Distinct from caramelization (which is sugar breaking down on its own at higher temps, around 320-360°F / 160-180°C). Both reactions happen on a brownie surface during baking and combine to create the crackly mahogany top crust that defines a good fudge brownie.
oven spring
The dramatic rise in the first 10 minutes of baking, as trapped fermentation gas expands, water flashes to steam, and yeast does its last burst before dying around 140°F / 60°C. Most of a loaf's final volume comes from oven spring, not from bulk fermentation. The crust has to stay pliable long enough for the rising interior to push outward — which is why steam in the oven matters so much for hearth breads. A dry oven sets the crust early; the interior expansion has nowhere to go and the loaf comes up short. Scoring also affects oven spring: a well-placed cut gives the expanding gas a designed exit so it lifts the loaf at the score rather than blowing out a weak seam.
poolish
A wet, equal-parts flour-water pre-ferment with a tiny amount of yeast — roughly 100% hydration, typically 0.1-0.3% baker's percentage yeast. Mixed the night before and rested 12-16 hours at room temperature until domed, bubbly, and slightly tart-smelling. The next day, the poolish goes into the final dough as a pre-fermented chunk of flour. The technique is traditionally attributed to 19th-century Polish bakers (hence the name), though food historians debate the true origin; either way it migrated through France into the modern artisan tradition. The point: a poolish ferment generates deep, slightly nutty flavor compounds the final dough never has time to develop on its own. It also produces better keeping quality — a poolish baguette stays fresh noticeably longer than a same-day version. Baguette and Neapolitan-style pizza both use poolish variants in the library.
Equipment

The physical tools that make some recipes possible. Banneton, couche, peel — what they are and what they replace if you do not have one.
banneton
A round or oval cane basket used to support shaped sourdough during the final proof or cold retard. The basket holds the loaf in shape while the wet dough relaxes, and the ridges between cane rings leave the signature concentric flour-circle marks on the finished loaf. Bannetons are typically lined with the cane itself (for the flour rings) or with a removable linen cloth (for a smoother surface). Sizes are matched to the dough weight: a 9-inch round banneton fits about 700-900g of dough; a 10-inch oval batard form fits up to 1kg. A flour-dusted bowl lined with a clean towel works as a substitute, though it won't leave the ring marks — many home bakers start there and only buy a real banneton once they're sure sourdough is sticking.
couche
A heavy linen cloth used to support shaped dough during the final proof, almost universally for baguettes and similar long loaves. The cloth is floured heavily, then pleated between each loaf so the pleats hold the loaves apart and the floured surface keeps the dough from sticking. The couche solves two problems at once: shape-holding (high-hydration baguettes would spread flat without lateral support) and surface drying (the heavy linen wicks just enough moisture from the dough surface to develop the characteristic dry, flour-streaked exterior that scores cleanly). A clean lint-free kitchen towel rigged in a half-sheet pan is a workable home substitute, though the real linen lasts decades and seasons over time.
peel
A flat wooden or metal paddle used to launch shaped dough onto a hot baking stone or steel, and to retrieve the baked loaf or pizza after. Wooden peels (usually maple or beechwood) are better for raw dough — the wood's slight grain gives the dough less to stick to and floured wood releases cleanly. Thin metal peels (usually anodized aluminum) are better for retrieving baked items because they slide easily under a crisp crust without crushing it. Many home bakers own both. Practical alternative: an unrimmed baking sheet or upside-down sheet pan works as a peel substitute, though it's heavier and less elegant.
